Do excess calories roll over to the next day?

There’s a few things I need to find answers to, I just haven’t had the time to research them online.  They include:

Do excess calories roll over to the next day?

Now that I’m actually paying attention to my calorie consumption and expenditure, I wonder if unused calories “roll over” to the next day or if you have just that 24-hour period to use them up before they’re stored as fat.  Let’s say I burn 2,500 calories on Wednesday.  But on Wednesday, I ate 2,800 calories.  That’s 300 extra calories.  Does my body store that as fat right away?  What if on Tuesday I had a deficit of 300 calories (I ate 2,000 yet burned 2,300), does it cancel out whatever I may have accomplished on Tuesday?  And say on Thursday, when I start tallying my calories, should I include the extra 300 from Wednesday in my count for Thursday, so I’d wake up Thursday morning with 300 calories already… I have no idea how this works.  Maybe I’m going about it wrong and should go by weekly calories instead of daily… I don’t know.

There’s a lot of research that needs to be done.

How much protein do I need a day?

I did a little bit of research on this, but different sites are giving me drastically different answers.

Are all calories created equal?

A calorie is a calorie is a calorie… or is it?  Does it matter where my calories come from as long as I burn them off or create a deficit?  I hear all this stuff about 30 - 40 - 30 or 20 - 80 and other diet guidelines.  What’s right??
